A Flexible, Delicious Dinner: Beef Stir Fry
One of my favorite flexible weeknight dinners is beef stir fry. Flavorful beef, whatever vegetables I have on hand or fresh from the garden and some fluffy rice make a delicious, quick and healthy combination the whole family loves.
Beef
Grab a package or two of our beef stir fry meat or use any steak you have on hand and slice it thinly. Whether you’re looking to add extra protein to your diet or stretch the meat you have a bit further, beef stir fry is a great option!
Sauce
Let the beef marinate by combining:
Soy sauce or amino acids
A jalepeno, red pepper flakes, chili crunch oil or anything else with a kick.
Sugar, honey or your choice of sweetener (if desired)
Lime juice, lemon juice, splash of vinegar, rice vinegar or other acidic ingredients
Heat your pan and add oil or tallow. Add the beef in a single layer and let it cook about a minute on each side, keeping the sauce/marinade mixture to the side in a bowl. After about two minutes, remove the beef and add the vegetables.
Vegetables
Get creative and use up what you have on hand! My favorite combination is thinly sliced onions, bell peppers, snap peas and broccoli. Add them to your pan and sauté until soft. Add the beef and sauce/marinade back into the pan and stir everything together. Want to thicken it up a bit? Add cornstarch by making a slurry with a tablespoon or so and a small amount of water. It’ll work its magic as the sauce begins to bubble and boil. Arrowroot powder is another option used by carefully sifting in a small amount to the warm mixture and mixing it up over low heat.
SERVE
Add some rice and top with your beef stir fry, try some sesame seeds and enjoy! Beef stir fry freezes well too.
