Chicken Meatball Recipe
These chicken meatball bowls have become a family favorite! Our toddlers love it and so do we. The chicken meatballs are packed with flavor and pair perfectly with the roasted veggies and sweet and savory sauce. This recipe was originally adapted from Munchin’ with Maddie’s Fall Sheet Pan Chicken Meatballs and Veggies with Maple Tahini Dressing recipe. The original is delicious as well and a great option if you’re looking for a gluten free chicken meatball recipe.
Ingredients
For the Chicken Meatballs:
1 large pastured egg
2 tbsp flour
⅓ cup grated apple (I used Honeycrisp)
¼ cup grated yellow onion
3 garlic cloves minced
½ tsp tsp poultry seasoning
1 tsp kosher salt
½ tsp dried thyme
¼ tsp black pepper
For the Veggies:
Veggies of choice: sweet potatoes, broccoli, brussel sprouts, asparagus, etc. (about 12 oz), chopped into pieces
1 tbsp avocado oil
½ tsp kosher salt
½ tsp italian seasoning
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp smoked paprika
¼ tsp black pepper
For the Sauce:
¼ cup organic plain Greek yogurt
1 tbsp maple syrup
1 tbsp apple cider vinegar
1 tbsp fresh lemon juice
½ tsp kosher salt
1 clove of garlic, minced
¼ tsp black pepper
For the RICE:
1 cup jasmine rice
1 cup chicken broth (here’s the recipe we use for homemade broth)
1 cup water
½ tsp kosher salt
Directions
Preheat oven to 400 degrees F.
Place veggies on a pan and add seasonings and oil. Bake sweet potatoes or brussel sprouts for 30 minutes and asparagus or broccoli for 20 minutes at 400 degrees. Since I only had sweet potatoes, I put these in the oven first.
Rinse rice and combine all ingredients in a pot on the stove. Bring to a boil, then turn heat to low and cover. Cook for 20 minutes (without stirring).
Combine all meatball ingredients in a mixing bowl. Make 14-16 meatballs and place them in a greased cast iron pan, sheet pan or glass dish. Add these to the oven and bake for 20 minutes or until the internal temperature reaches 165 degrees F. Broil for a few more minutes if you’d like the meatballs to have a golden finish.
Add all sauce ingredients to a bowl or jar and stir well.
Fluff the rice and add some to the bottom of a bowl. Top with roasted veggies, meatballs and a drizzle of sauce. We added avocado, cucumber and parsley as well. Enjoy!
